Sugar Cookies
**Allow time for dough to chill
Ingredients:
1 cup unsalted butter, softened
1 cup sugar
1 large egg
1 1/2 teaspoons vanilla extract
2 cup flour
1/2 teaspoon baking powder
1/4 teaspoon salt
Parchment paper
Assorted coarse sugars (sanding sugar)
1. Beat butter in a large bowl till fluffy. Gradually add the 1 cup of sugar, beating until
smooth. Add the egg and vanilla, beating until blended.
2. In another bowl stir together the flour, baking powder and salt. Gradually add this to
the butter mixture beating just until blended.
3. Divide the dough into 3 portions and wrap each portions in plastic wrap. Chill for
1-1 1/2 hours. Work with one portion at a time. Shape the dough into 1 1/2 inch
balls; roll each ball in the coarse sanding sugar. Place 2 inches apart on the
parchment lined baking sheets. Gently press and flatten each ball to 3/4 inch
thickness.
4. Bake 350 degrees for 10-12 minutes or until the cookies are lightly browned. Cool
5 minutes on baking sheets. Transfer to wire racks. Cool. Happy Holidays!
