Cocoa Brownies
Ingredients:
1/2 cup all-purpose flour
1/2 cup unsweetened cocoa
1/4 teaspoon baking powder
1/4 teaspoon salt
6 tablespoons butter
1 cup sugar
2 large eggs
2 teaspoons vanilla extract
1/3 cup mini chocolate chips, optional
1. Preheat oven to 350 degrees. Grease 8x8 baking pan. In medium bowl with wire whisk, mix flour, cocoa, baking powder, and salt.
2. In a 3-quart saucepan, melt butter over low heat. Remove saucepan from heat; with spatula, stir in sugar; eggs, one at a time; and vanilla until well blended. Stir in flour mixture. Spread batter in prepared pan. Sprinkle with chocolate chips, if using.
3. Bake for 18 to 20 minutes or until toothpick inserted in brownies 2 inches from center comes out almost clean. Cool brownies completely in pan on wire rack.
4. When cool, cut into 16 servings.
