Valentine Cookies
Ingredients:
3 1/2 cups all-purpose flour
1/2 teaspoon salt
1 cup unsalted butter, softened
2/3 cup flour
1 large egg
1 tablespoon light corn syrup
1 tablespoon vanilla extract
pink sanding sugar
white sanding sugar
few drops of red food coloring
Directions: Preheat oven to 350 degrees.
1. It's easiest to make one batch of dough and divide in half.
2. In a bowl whisk together the dry ingredients of flour and salt. Set aside.
3. Using a stand mixer, cream together the butter and sugar until fluffy.
Add the eggs one at a time. Then add the corn syrup and vanilla extract.
4. Now add the flour mixture one third at a time until thoroughly mixed.
5. Divide the dough in half. Add a few drops of red food coloring to half
of the mixture to create the pink dough.
6. Pat the dough into two disks, wrap in plastic, and refrigerate 1 to 2 hours,
or until firm enough to roll. If the dough becomes too firm, soften at room
temperature for about 5 minutes.
7. Roll each disk between two sheets of waxed paper or parchment paper.
Sprinkle with the sanding sugar. Gently place the wax paper on the dough and
roll over so the sugar adheres. Using a knife cut the dough into strips about
1/2 inch wide. Place the strips side by side, alternating colors. Place
a piece of of wax paper over the strips and again roll over the top to make
the strips adhere together.
8. Return the dough to the refrigerator one more time. Use a heart cookie cutter
to create your Valentine's cookies. For leftover scrapes use a tiny heart cookie cutter.
9. Bake for 8 -10 minutes or until cookies start to brown lightly around the edges.
Notes:
* The best time to add the sanding sugar is when the dough has warmed up a bit.
If the dough is too warm the sanding sugar won't stick.
